How to make an Italian Baked Chessecake - Abruzzo Style

My Nonna is an allehuia cook.
All her recipes are in her head.
She does however have a tiny notebook where in her lovely Italian script she writes down all the ingrediants needed to make her dishes but doesn't include any instructions.
My cousins, The Boys had the great idea to record Nonna on video talking us through some of our favourite recipes.
Below is the photo version that I took of Nonna and The Boys baking her fabulous Chocolate Ricotta Cake.
An old fashioned hand beater for the eggs to make the pastry
Gradually (and carefully) stirring the flour into the eggs and milk

Nonna doesn't 'trust' paper or plastic milk cartons. All her milk is transferred to glass jars as soon as it comes home from the corner shop.

Nonna kneading the pastry
The grated chocolate, orange rind and ricotta filling that was made the day before

The greased dishes ready to be lined with pastry and filled with chocolate

The finished product...with a slice missing of course
